Preparation
- Heat the oil in a pan and let the unpeeled garlic clove brown.
- We remove the garlic and let the oil cool.
- Grate the truffles and add them to the oil. We mix and leave to flavor for a few minutes.
- Let's separate the oil from the truffles and put it back in the pan, turn on the flame and add the eggs.
- Let's start by mixing the egg whites and only when these are half cooked and start to turn white, we also break the egg yolks and mix adding the truffle at the end.
- Let it cook for a few moments, the scrambled eggs with truffles must be very soft and creamy.
- We serve and conclude with a few flakes of truffle!
