Baking by feel, with love
Parmi les douceurs de Noël typiques de l'Ombrie, il y en a une avec une forme très particulière: le torciglione. Ses origines sont encore incertaines: certains prétendent que sa forme est celle d'une anguille de lac, d'autres celle d'un serpent. Indépendamment de son histoire, c'est un dessert célèbre dans toute la région, dont il existe différentes versions qui peuvent varier en dosage ou pour la présence ou l'absence de certains ingrédients, mais surtout pour les décorations finales, qui laissent beaucoup de place à la créativité.
Dessert traditionnel de la période des vacances d'hiver (de début novembre jusqu'au Carnaval), préparé spécialement à Noël, la rocciata est une recette typique de Foligno, Assise et Spello.
Sa forme en spirale rappelle celle d'un serpent enroulé sur lui-même, dont la couleur rouge est donnée par les alchermes. À l'intérieur de la pâte, une riche garniture de pommes cuites avec des noix, des amandes, des pignons de pin, des figues sèches, des raisins secs et du chocolat. Bien sûr, les variantes basées sur le terroir et les traditions familiales, qui restent généralement secrètes, ne manquent pas!
Les pinoccate sont des friandises traditionnelles ombriennes, liées aux fêtes de Noël. A base de sucre et de pignons de pin, avec leur forme caractéristique en losange, ils peuvent être blancs ou noirs (dans la variante chocolat).
Emballés dans des papiers colorés, ils sont fabriqués avec un mélange d'eau et de sucre, bouilli jusqu'à l'obtention d'un sirop épais, dans lequel les pignons sont ensuite plongés. Versez le mélange sur une surface en marbre, pendant qu'il refroidit, il est modelé dans de nombreux petits losanges.
Typique de Terni, le Panpepato (ou Pampepato) est un dessert aux origines très anciennes. Cette spécialité de forme ronde est à base de noix, de noisettes, d'amandes, de cannelle, de muscade, de chocolat, de miel et de raisins secs : un véritable concentré d'énergie qui en fait, de fait, un dessert très apprécié pendant la période de Noël.
Chaque famille utilise une version révisée de la recette traditionnelle, ce qui explique également pourquoi elle est considérée comme un dessert populaire.
Récemment, le Panpepato di Terni a reçu l'importante reconnaissance du produit IGP - Indication Géographique Protégée précisément pour sa typicité, pour ses origines anciennes qui remontent à au moins 1500 et pour le lien fort avec le territoire de toute la province de Terni et les municipalités de Massa Martana, Marsciano, Todi, Fratta Todina, Montecastello di Vibio et Deruta.
